What to Expect at the Sanitation Control Procedures (SCP) Course
The Sanitation Control Procedures (SCP) course introduces participants to the eight key areas of sanitation that are explicitly listed in 21 CFR Part 123.11 and teaches participants how to develop sanitation monitoring procedures to effectively meet the monitoring and record keeping requirements noted there.
At the conclusion of the training, participants will have a better idea of how to monitor and keep record of their Sanitation Control Procedures as mandated by the U.S. Food and Drug Administration (FDA) Seafood HACCP regulation (21 CFR 123.11).

In-Person June 8-9, 2026
Gulfport, MS
The Seafood HACCP training course teaches the principles of HACCP and provides hands on training in conducting a hazard analysis and developing a HACCP plan. Attendees will also gain the essential skills to effectively navigate the FDA Hazards Guide which helps identify significant Page 1 of 3 hazards associated with specific seafood species and processes.
At the end of the training, participants will receive course completion certificates, which fulfill the training requirement outlined in 21 CFR Part 123.10. Individuals holding this certificate can be referred to as “HACCP Trained Individuals,” and organizations employing them may advertise that they operate under a “HACCP System” or a “HACCP Program.”
